Ingredients

  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 3/4 tsp. salt
  • 1/4 tsp. grated nutmeg (freshly)
  • 1 cup unsalted butter (at room temp)
  • 2 cups granulated sugar
  • 3 large eggs (at room temp)
  • 2 large egg yolks (at room temp)
  • 1 Tbsp. vanilla extract
  • 3/4 cup coconut milk (canned Thai)
  • 3/4 cup coconut milk (canned, actually … just use the rest of the canned coconut milk)
  • 6 Tbsp. sugar
  • 1/2 cup dark rum (did I not tell you BOOZY MEETER!)
  • 4 Tbsp. butter (cut into pieces)
  • 6 Tbsp. heavy cream
  • 6 Tbsp. brown sugar
  • 1 pinch salt
  • 1 Tbsp. dark rum
  • 1/2 cup sweetened coconut flakes (toasted)
